Red Velvet Pancakes with Cream Cheese Icing

If you love red velvet cake, why not have it for breakfast?  These red velvet pancakes taste very similar the cake of the same name and are even served with a delicious cream cheese icing.  Definitely for special occasions!

Ingredients
  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1/2 cup sugar
  • 2 Tbsp red liquid food coloring
  • Cream Cheese Icing
  • 1 stick unsalted butter, room temperature
  • 1 8-oz. package cream cheese
  • 2 cups powdered sugar
  • 1 Tbsp milk
  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: Serves 4

Preparation

Into a large bowl, sift together the flour, sugar, cocoa, baking powder, baking soda and salt. Whisk together buttermilk, eggs, sugar and red food coloring in another bowl. Gradually stir buttermilk mixture into flour mixture just until dry ingredients are moistened. Pour about 1/4 cup batter for each pancake onto a hot buttered griddle (heated to 350°F) or large nonstick skillet.

Cook 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked. Turn and cook 3 to 4 minutes or until done. Place in a single layer on a baking sheet, and keep warm in a low oven up to 30 minutes.

Serve with Cream Cheese Icing.

Cream Cheese Icing:

Blend together the butter and cream cheese with a mixer.  Gradually add in the powdered sugar and mix well. Blend in the milk.  Add a little more milk, a tablespoon at a time for the right consistency. The icing should be fairly spreadable. Refrigerate any leftover icing and use as a topping for regular pancakes or muffins.
